Omega 3 Deficiency.

It is a well known fact that the normal western diet has an omega 3 deficiency. This makes 90% of the population prone to have a very low omega 3 supply. That is to say, there is an excess of omega 6 fats in our diet that come from eating too much grains, affecting the omega 6/ omega 3 ratio.

What Omega 3 Eggs Are.

The usual omega 3 source is fish oil high in omega 3 fats. Nevertheless, it is a well known fact that a change in the diet of any animal will produce a change in the fatty acids content of the end product. Thus, fish, pork, cows, and hens when given a high omega 6 diet would have meat, milk or eggs high in omega 6 fats. The contrary is also right.

The hen’s diet is usually changed by giving them 15 to 30% flaxseeds. This way 200 mgrs. Omega 3 fatty acids eggs are obtained( 3 to 6 more times than normal eggs)

We have to understand that even under those conditions, when you feed flaxseeds to animal, you are also giving them the insecticides and the other toxic products used to produce it. Omega 3 Eggs Studies.

1-University of Utah, Salt Lake City, Division of Food and Nutrition. The effect of omega 3 eggs in blood lipids and blood pressure of 11 men and 11 women was study. The first group was given 4 eggs with omega 3 per day for 4 weeks and then 4 control eggs per day during 4 weeks. The second group ate the same but in reverse order. They found that total cholesterol increased when they had the control eggs and was stable with the omega 3 eggs. Triglycerids decreased with omega 3 eggs and increased with control eggs. Blood pressure did not changed with control eggs and diminished with omega 3 eggs. They concluded that eggs high in omega 3 seem very healthy.

2-University of Alberta, Canada, Department of Animal Science researched the effects of feeding volunteers with omega 3 eggs. 23 male students were given 2 omega 3 rich eggs or 2 normal eggs for 18 days. Their total and LDL cholesterol increased in those having the normal eggs but remained the same in those taking the omega 3 eggs. The researchers concluded that the cholestiremic properties can be altered varying their fatty acids composition.

3-A study by Lewis et al.( 2.000) done in hypercholestiremic individuals during 6 weeks. Two normal eggs per day or 2 omega 3 eggs were given to each participant. None of the participants showed changes in total or Ldl cholesterol with exception of 2 individuals, out of 23. In this case there was an increase of total and LDL cholesterol. These individuals were called responders. Researchers concluded here that taking 2 eggs per day appears to have no negative effect in blood lipids. Nevertheless, there is certain population segment that to increase omega 3 consumption via omega 3 eggs does not look appropriate.

Raw Omega 3 Eggs.

High omega 3 eggs I didn’t want to end this page without a few words about raw eggs. I am sure this may sound gross for some people, like it did to me the first time. I could not understand why to eat raw eggs, except for some kind of punishment. When I learned that raw eggs had exceptional nutritional qualities I wasn’t sure I could do it.

There is a very low probability to get salmonella. One in every 30.000 eggs would have it. Really low. Besides, salmonella in a healthy adult is no big thing, just a few runs to the bathroom. Nevertheless, salmonella could be very serious in a child, an old or sick person.

Even if this sounds strange, eggs should not be refrigerated. It is better to keep them in a cool place. If you refrigerate it, its amino acids will be destroyed and you will not feel the sulfurous smell of the rotten egg.
